This Mediterranean greek chicken salad with citrus vinaigrette is one of my absolute favorite healthy meal options for lunch. I like to prepare the dressing in advance and double the recipe. I also cook a couple of chicken breasts a day or two ahead so it’s easy for me to whip up a quick salad during the week between taking care of kids and the household.

Ingredients
- Marinade for the chicken:
- 1/2 lemon juiced
- 1/4 cup olive oil
- 1 TBS Webber Kickin' Chicken Seasoning
- 1/2 TSP kosher salt
- 1/4 Black Pepper
- Lemon Citrus Vinaigrette Dressing
- 2 tablespoons white wine
- 2 tablespoons lemon juice
- 1/2 teaspoon honey
- 1/2 teaspoon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup extra-virgin olive oil
- Salad:
- 2 cups of pre washed mescaline mix (or your favorite lettuce)
- 1/2 cup of arugula (optional)
- 1/3 cup feta cheese crumbles
- 1/2 cup pitted kalamata olives
- 1/4 cherry tomatoes (halved)
- 1/2 bell pepper (sliced)
- 1/4 cup Persian cucumbers (sliced)
- 1 chicken breast
Instructions
- Marinade for the chicken: Rinse and pat dry the chicken breast. Place it in a zip lock bag and add lemon juice and olive oil. Close bag and massage the chicken in the bag to mix up the liquid. Let sit for at least 20 minutes. Remove chicken and shake off excess liquid. Sprinkle with Webber Kickin' Chicken Seasoning and salt and pepper. Grill on medium heat until the internal temperature of the chicken breast reaches 160 degrees. Let rest for 10 minutes.
- Lemon Citrus Vinaigrette Dressing Place all ingredients in a blender or food processor except for the olive oil. Slowly add the olive oil in a thin drizzle while blending the dressing. This process will allow the dressing to emulsify. Dressing should look creamy when all the oil is added.
- Salad: Prep vegetables and assemble base of salad. Top with sliced chicken breast and drizzle Lemon Citrus Vinaigrette Dressing on top. Enjoy!
