Lentils are one of my absolute favorite meals. They’re healthy, delicious, filling, and very easy to make. I often make this recipe for dinner or sometimes even lunch if the mood strikes. Lentils are also a great source of fiber and protein especially when you’re in the mood for a vegetarian meal! My kids also love this recipe which is awesome because it’s a great easy week night dinner you can make in about 25 minutes and everyone’s happy.

Instant Pot Version:
Proceed with all steps in the instant pot instead of a sauce pot. Once the chicken broth is added put the lid on and pressure cook on high for 4 minutes.
Ingredients
- 2 tbs extra virgin olive oil
- Pinch of salt
- Pinch of pepper
- 1/2 onion (diced)
- 2 garlic cloves (minced)
- 1 carrot (diced)
- 1 celery stalk (diced)
- 1 cup of dried brown lentils
- 1/2 cup dry red wine
- 4 cups of chicken or vegetable broth
Instructions
- Add 2 tbs of olive oil to a large sauce pan on medium low heat. When the oil begins to shimmer add the onion and garlic. Be careful not to let them burn.
- Add the carrots and celery. Season with a pinch of salt and pepper. When the vegetables begin to soften add the lentils and sauté on medium high heat.
- When the lentils are coated in oil and heated though, add the wine. Keep the heat on medium high until the liquid is mostly absorbed then add chicken broth.
- Simmer on low until most of the liquid is absorbed. If they dry out before the lentils are tender, add a little bit of water until they reach a softened consistency. Do not over cook them they will turn to mush.
- Serve over white rice or pasta.
